Vanilla Pudding

I have never been a fan of vanilla pudding until I tried this one. It is oh so good!

2 1/2 C. Milk (any kind)
3 Egg Yolks
1/2 C. Maple Syrup or Honey
4 T. Corn Starch
1/4 Tsp. Salt
1 Tbsp. Butter
1 Tsp. Vanilla

In a medium saucepan, whisk together milk, egg yolks, maple syrup or honey, corn starch and salt. Cook over medium heat, stirring CONSTANTLY until pudding begins to thicken. Add butter and vanilla and stir to combine. Remove from heat and keep stirring until butter is melted. Serve right away or refrigerate until later. (If refrigerating, place plastic wrap directly on the surface of the pudding to prevent the skin from forming)
